Epcot Food and Wine Festival Recipes 2002

 

 

Citrus Slaw
Fresh From Florida

Citrus Vinaigrette-
1 cup olive oil
½ cup white balsamic vinegar
½ cup orange juice
1 ½- ounces honey
¾-ounces chopped fresh basil
¾-ounces chopped fresh cilantro
1 pinch salt

Citrus Slaw-
1 orange, cut into segments
¼ grapefruit, cut into segments
½ head cabbage, finely shredded

 

In a large bowl, mix vinegar, orange juice, honey, basil, cilantro and salt. Slowly whisk in the olive oil until all of the ingredients come together forming the vinaigrette.

In a separate bowl, mix together the orange and grapefruit segments, and cabbage.

Pour vinaigrette over the salad and chill for 30 minutes before serving.

Makes 8 servings.
