Choukchouka

Serves: 4
1/2 cup olive oil
4 tomatoes, chopped
2 green peppers, chopped
2 cups loosely packes coriander, chopped
1 tablespoon minced garlic
1 tablespoon paprika
1 tablespoon cumin
1 tablespoon tomato paste
1 teaspoon salt
1 teaspoon white pepper
Place oil in a large pot over medium heat. Add tomatoes, peppers,
parsley, and coriander. Mix well. Add the remaining ingredients
and cook, stirring frequently, until peppers are tender (10 to 15
minutes). Serve warm over the salmon fillets.
