This full-service restaurant serves a variety of flame-roasted
meat, fish and poultry from its wood burning open grill. Featured
in several menu items are mouth-watering Mayan native seasonings,
including the rare Achiote, blended with sour orange and onions
to provide a delicate flavor and a golden color to the meat. Beyond
Mexico, specialties more associated with Caribbean islands include
plantain, black beans and rice, pineapple and such exotic fruits
as papaya, carambolo and mangos.
A third major menu group comes from the ranchos of the American
Southwest with thick T-bone steaks, pork and lamb.
